Default clinician when booking appointments. No choice to change

User would love to have the choice to choose the default clinician when making appointments as currently it selects who the patient is enrolled with, but user would like to have the choice to choose the starred treating staff for example to be the default clinician when making appointment (see attached picture to show the location of the recommendation). Thank you
