This clinic has a lot of transgender patients, the patients are very sensitive regarding this topic and would prefer to use "U" = "Unknown" during the transition period.

Gender is fluid, although birth "sex" is distinct.
SUGGESTION:
create a field in the demographics for "sex"
sex should default into forms & billing
keep the "gender" field
this should be the option if the pt decides to transition
create a drop-down (in demographics) for pronouns (this should have the option to show on the pt banner)
